Dumpling Skins

Here in Israel we don’t really have access to a lot of Asian things. The ingredients are often here, but the items themselves are either not available or very little selection. Tofu for example is few and far between, and very expensive. We found a place to buy dumpling skins.. but yeah.. not a very good experience. On to making our own..

2 Cups Flour
1/2 Tsp Salt
2/3 Cups Water

Combine then kneed together until it holds together well but is not sticky. It should be firm and slightly dry. Place in a plastic bag with no air on the counter. It needs to rest for at least 20 minutes, but can rest a lot longer.

When ready, cut half the dough out and leave the other half in the bag to stay moist. Roll the dough into a log, then cut small into thin pieces.

This batch was done with 1 Cup White Flour, 3/4 Cup Wheat Flour, and 1/4 Cup Ground Flax Seed

 

Roll each piece on a floured surface. That’s it.. its pretty easy actually.. just takes a bit of time.

Boazi

When mom came to stay with is for a while she made all SORTs of yumm foods. Before she left she made a boat load of Boazi and froze them for us. This is inspired by hers but also combines Diane’s Won Ton flavors. They turned out fantastic and Jacob loves them.

Boazi Filling

1 Kilo Ground Pork
1/2 Kilo Shrimp (cleaned and ground)
3 Tbsp Corn Starch
3 Tsp Five Spice
2-3 Green Onions
1/2 Bunch Cilantro
1 Cup Chinese Dried Mushrooms (hydrated and chopped)
1 Medium Piece Ginger Root
2 Tbsp Sesame Oil
2 Tbsp Soy Sauce
2 Cups Finely Chopped Cabbage (Nappa)

Put dried mushrooms in a bowl and fill with hot water. Place another bowl on top to hold them down into the water to hydrate and set aside.

Clean and grind shrimp and pork. Chop cabbage into very fine pieces. Chop very fine or put green onions, cilantro, mushrooms, and ginger into food processor.

Mix everything together.

Boazi Dough

3 Cups Flour
3 Tbsp Active Dry Yeast
2 Tbsp White Sugar
2 Tsp Salt
1-1 1/2 Cups Warm Water

Mix dry ingredients in a large bowl. Slowly add warm water a little at a time. Thoroughly mix before adding more. Kneed dough until thoroughly mixed. It should be slightly dry and not sticky. Place in a covered bowl somewhere high to ferment for at least an hour.

Once doubled in size punch out the air and work into a roll. Let rest then cut into pieces. Roll the pieces into slightly thick skins and fill.

Steam or pan fry.

Cheese Crackers

Cheese Crackers .. like Cheez-Its but cheesy and buttery instead of oily and chemically.

1/3 Cup Grated Cheddar Cheese (extra sharp is best)
1/4 Cup Grated Parmesan Cheese
1/4 Cup Warmed Butter
1 Tsp Kosher Salt
1 Cup Flour
3 Tbsp Ice Cold Water

Thoroughly mix cheeses, butter, and salt. Gradually mix in flour until mixture is crumbly. Add 1 Tbsp of water at a time mixing thoroughly between each spoonful until mixture is a firm dough. Press into a disk like you would a pie crust, then wrap in plastic and set in the fridge for an hour or so.

After dough is set, cut into two pieces then roll each piece onto baking paper until very thin. Divide the rolled dough with a pizza cutter or knife.

Bake at 200° C for about 15 minutes or until fully cooked and golden. Even what may appear to be slightly more done than it should be will turn out awesome and crunchy. Experiment.. you’ll see.

Peanut Butter

Homemade Peanut Butter (חמאת בוטנים הביתי)

Peanuts
Salt
Honey

This is so easy.. I mean SO easy. It’s crazy how easy it is.

Start with roasted peanuts (salted, unsalted, honey roasted, whatevs). If you only have raw, roast your own in the oven.

Add peanuts and a pinch of salt to a food processor. Blend! At first its just ground peanuts.

Then becomes more fine. Blend more!

Then it becomes a bit pasty. Blend more!

Keep it up until is the consistency you like. Also you can add honey at this point.

I don’t think I’ll every buy peanut butter again!

Scalloped Potatoes

Potatoes
2 Cups Milk
1-2 Onions
Garlic
1/4 Cup Butter
1/4 Cup Flour
Pepper & Herbs
Ham or Bacon
Cheese

Melt butter in sauce pan, lightly saute garlic, then add flour and spices. Gradually whisk in milk until smooth. Slice potatoes and layer into baking pan. Slice onions then make a new layer. Chop ham/bacon and add to same layer. Add another layer of potatoes then pour over sauce. Top with bread crumbs and cheese. Bake at covered at 180° C for an hour. Uncover then bake for 30 minutes until golden.

Chocolate Pudding

1/4 Cup Sugar
1/4 Cup Unsweetened Cocoa Powder
2 Tbsp Cornstarch
Pinch of Salt
2 Cups Milk
1 Large Egg
1/2 Cup Semi Sweet Chocolate Finely Chopped

Mix sugar, cocoa powder, cornstarch, and salt in a pot. Add cold milk and whisk thoroughly. Slowly heat mixture while constantly whisking. Keep heating until fully mixed and it starts to thicken. Once its thickened and slightly boiling remove from heat. Beat egg in a bowl and whisk into mixture. Add chocolate and whisk until melted and smooth. Pour into containers and cool in the fridge for a few hours until firm.

For mint chocolate pudding: Separate 1 cup of the milk. Slowly warm in a separate pot with a 1/2 cup of fresh mint leaves. Do not boil. Keep warming until mint flavor is as deep as you like. Add into the chocolate mixture as it’s warming. Do not add until the chocolate mixture is already warn.

Bacon!

Homemade Bacon (בייקון הביתית)!!

Bacon really is just about the perfect food. It’s not the most healthy thing you can eat but it sure is amazing. I personally know people that were long time vegetarians.. but bacon.. that’s what got em’. “I didn’t have a problem with other meats, even a nice steak, but I’d dream about bacon.” Wull yeah.. cuz its BACON!!

So I figure if bacon is good.. homemade bacon has to be amazing!

1-2 Kilos Pork
1 ½ Cups Ground Celery Stocks with Leaves
½ Cup Sea Salt
½ Cup Brown Sugar
1 Tbs Black Pepper

Variations:
1 Tbs Liquid Smoke. I used hickory.
1/2-1 Cup Maple Syrup instead of sugar for Maple Bacon.
Garlic To taste for bacon with a bite.
Savory Spices for savory bacon.

Grind celery in food processor until liquefied. Add in salt, sugar, spices, and liquid smoke. Wash pork and pat dry until tacky. Set pork and mixture in an air tight sealed bag in the fridge for at least 7 days.

After cured for about 7 days, remove the now bacon from bag and wash it in cold water. Slice a piece off and fry it up to taste it. You’ll notice that a lot of water comes out which is why we’ll dry it. If its a bit salty for you soak the bacon in cold water in the fridge for an hour or so. You may need to repeat the slice, fry, soak thing a time or two depending on your tastes.

When the saltiness is about right for you it’s time to dry it. Here you could put a black pepper rub if you want pepper bacon. Dry it in the oven at 100 C° for 2-3 hours to remove the excess water. Bacon!!

Btw: I was right.. homemade bacon is amazing!

Apple Pie

Loads of Green Apples (Granny Smith, Pippin)
1/2 Cup White Sugar
2 Tbsp Cinnamon
1/4 Tsp Nutmeg
1 Egg
1 1/2 Pie Crusts

Peal and core apples then place in a bowl of cold lemon water. Prepare pie crust into pan. Slice apples and place in layers in crust generously sprinkling a mixture of cinnamon, nutmeg, and sugar between each layer. Apples of course cook down so make sure to stack sliced apples until heaping nice and high. Cover the heap with the rolled out 1/2 crust and pinch the edges together to seal the pie. Scramble the egg then brush on the egg to coat the top crust. Puncture the top a couple times with a nice to allow steam to escape.

Place in hot oven at 250 C° for 15 minutes then lower the heat to 150 C°. Bake until you hear the juices boiling for at least 10 minutes.

Coffee Brownies

1 C Flour
1/4 C Cocoa Powder
1 Tsp Cinnamon
1/2 Tsp Salt

1/2 C Semisweet Chocolate
1/2 C (120ml) Butter
1/2 C Coffee

4 Eggs
2/3 C Sugar
2/3 C Brown Sugar
2 Tsp Vanilla Extract

1/2-1 C Semisweet Chocolate Chips

Sift together flour, cocoa powder, and salt.

Melt chocolate in a double boiler or a bowl in boiling water. Separately melt butter and cook until slightly burnt golden brown, then mix into melted chocolate. Mix in coffee.

Beat together eggs, sugar, and vanilla until thickened, then mix in chocolate mixture. Stir wet and dry mixtures together then fold in chocolate chips.

Bake at 180 C° for 35-30 minutes until center is set and edges are firm.
