Pizza

4 cups flour
3 teaspoons yeast
1 teaspoon salt
1 teaspoon sugar
1 1/2 cup warm water
2 tablespoon olive oil

Mix together flour, yeast, salt, and sugar. Fully mix in warm water and olive oil. Let stand to rise at room temperature for about 2 hours.

Roll out on floured surface, top with all sorts of good things, transfer to heated baking stone*, and bake hot until golden (400 F ~ 210 C).

*The stone should already be hot in the oven, so I use a well floured pizza peel so it slides off onto the stone.

Taiwanese Beef Noodle Soup

Ingredients:
10 cups water
1 cup soy sauce
1/2 cup Chinese rice wine
1/4 cup balsamic vinegar
1 tablespoon brown sugar
2 2-cm cubes fresh ginger, cut into thin slices
5 garlic cloves
3-4 whole star anise pieces
1 kilo beef, cut into chunks
2 onions, cut into small chunks or thin slices
4-5 carrots, chopped
2-4 portions of egg noodles
1 chili pepper, sliced (optional)
cooking oil
salt
5 stalks of green onions, chopped
10 fresh cilantro stalks, chopped
 
 
Chop up all the vegetables (except the green onions and cilantro) and beef.
 
Sear the beef chunks in hot cooking oil for about 1 minute. Combine the beef (and residual meat juice) with water, soy sauce, rice wine, vinegar, brown sugar, ginger, garlic, star anise, onions, carrots, and chili in a large pot.
 
Let simmer on very low heat for at least 4 hours. For best results, cook in a crock pot overnight (about 8 hours). Beef should be very tender. Salt to taste.
 
In a separate pot, cook the noodles.
 
Chop up the green onions and cilantro.
 
Drain the noodles. Serve by pouring beef soup over the noodles and removing the ginger and star anise pieces. Sprinkle the green onions and cilantro on top.

Brocoli Chicken Bake

2 Large Brocoli Clusters
2 Chicken Breasts
2 Large Onions
2-3 Cloves of Garlic
1/4-1/2 Kilo Grated Cheese (Emek is awesome)
Few Sprigs of Rosemary
Milk
Flour
Butter

Cut brocoli and chicken into chunks and put aside in large baking pan. Saute chopped onions, garlic, & rosemary in butter until golden. Add milk and heat until hot, then slowly add mixture of cold milk and flour. When entire mixture is hot and thickened, add 1/2 of the grated cheese. Pour mixture over brocoli and chicken. Top with the remaining cheese and bake.

Mama’s Fish

My asian gramma’s (Mama) steamed fish. Simple and so delicious.

Orange Roughy or Sole Fillets
Green onions – chopped
Ginger – match sticks

1) 2TBs oil – very hot
2) Soy Sauce / Sugar / Water

Lightly steam fish with onions and ginger on top. Pour both 1 & 2 onto fish to finish cooking.

Sylvia’s Southern Style Pulled Pork

Rub a Large Pork Shoulder with:
3 Tbs. salt
3 Tbs. paprika
2 Tbs. dry mustard
2 Tbs. brown sugar

Marinate for 1 or more hours.

Bake at 300 degrees for 5 hours, or you can crock-pot it if you want.

B-B-Q sauce to mix into pork after it’s cooked:
1 1/2 cups cider vinegar
1 cup mustard (poupon or regular)
1/2 cup ketchup
1/2 cup (or more) brown sugar

Simmer for 20 minutes.

Won Tons

This is the ingredient list for Diane’s home made won tons. Very delicious. Pretty much gotta wing it, then wrap it up in won ton skins.

Twice ground lean pork
shrimp
water chestnuts
cilantro
green onions
chinese 5 spice
ginger
salt
egg white
corn starch
wrappers
broth:
white radish
pork bones
shrimp
cilantro
thin noodles

Chicken Enchiladas

Cook 6 chicken breasts in 1/2 chopped onion and 2 jalapenos
Chop and mix:
6 chicken breasts
4-8 jalepenos
1 habenero – for real men
1 1/2 onion
1 can refried beans
1/2 cup sour cream

Roll mixture in corn tortilla with cheese
Top with enchilada sauce and more cheese (I like Las El Pato)
Bake @350 degrees for ~30 minutes. until there is a nice done look.
